I may be stating the obvious, but -- although it does indeed appear that there were more words intended for Uncle Meat than ever recorded, let us not forget "The Uncle Meat Variations" from the Uncle Meat album:

Had these full lyrics been done, there probably would've been CC with "Cruisin' For Burgers" too.

There's also accordion (but not clarinet) on Handsome Cabin Boy.

Yes, apparently once the rhythm tracks were laid down (many of them with Mundi still in the band I guess) the bulk of the work was done with Bunk and Ian (and then Art, who may have appeared after his first gig later that month). Though on the photos Roy Estrada appears in the studio too.

Regarding the two altos, looks like Ian and Bunk are both credited with alto and tenor on "Ruben". So maybe one of the songs on "Ruben" has dual alto parts? If not, then maybe there's two altos buried in the multiple overdubs for stuff like "In the Year of the Plague".
