Sorry I'm somewhat late to this discussion.

I attended the October 11, 1971 Carnegie Hall concert (my first rock concert). I clearly remember that they did not play "Billy The Mountain." Since one of my friends saw the MOI in June at the Fillmore and had been talking about "Billy The Mountain" for months, I really wanted to hear the piece. I can't remember everything played in the concert (I know they did the 200 Motels Finale, Call Any Vegetable, and Tears Began To Fall), but I would certainly remember 45 minutes of BTM.

Ned, thanks for your eyewitness account.

However, according to the FZ giglist it seems that
the Mothers did play two shows that night at the Carnegie Hall,
so it's highly probable that they might have performed BTM during the show that you didn't attend.

Okay, this makes more sense then. I would have been at the early show, since it was a Monday night and I had to go to high school the next day. They were more likely to make the second show the longer show, since they wouldn't have to stop at a fixed time to clear the hall.
